The beginning of August has brought some lovely weather so far in the Peak District, why not come and visit us - we have lots of Summer Sizzling Offers on during the Summer holidays. You could visit one of the County Shows or take a walk around the stunning Chatsworth Estate and then finish the day off with the tasty Crunchy Thai Chicken Noodle Salad.

New function room at Knockerdown Cottages


The Brackendale Room (our largest function room) will complete the feel and look of our holiday site at Knockerdown. We are transforming the room into an indoor-outdoor space to host wedding, corporate events, parties, team building exercises or for any other occasions. So the pressure is on to be ready for our first ever Wedding Fayre/Open Day!!

So this message goes out to all our friends, family, colleagues, guests and future guests we would like to formally invite you to our Wedding Fayre/Open Day.

We will have hair and make up demonstrations, childrens activities on the Meadow and in the Pool, flower and balloon demonstrations, a photo booth, wedding dress models and a free BBQ and soft drinks.

Come along and be part of the 30,000 strong crowd at the UK's biggest free outdoor classical concert. Don't forget your picnic!

August's Recipe of the Month - Crunchy Thai Chicken Noodle Salad

Crunchy Thai Chicken Noodle Salad

Serves 2 people, Preparation time 15 minutes, Cooking Time 10 minutes


2 chicken breasts

2 bundles of rice noodles

3 teaspoons clear honey

1 red chilli finely chopped

3 tablespoons soy sauce

2 teaspoons lemon grass paste

1 small red onion, finely sliced

3 small carrots shredded

1 chicory shredded

100g mangetout, shredded

small handful of mint leaves


1. Cut each chicken breast into 4 long thin pieces and griddle or fry until cooked.

2. Cook the noodles according the pack instructions or place in a bowl and cover in boiling water, cover and leave for 5 minutes.

3. Mix together the honey, chilli, soy sauce and lemon grass paste.

4. Drain the noodles and toss them together with the shredded vegetables and place on the plate.

5. Place the chicken on top of the pile of noodles and then pour the sauce over the top and enjoy!

Location: On the B6012 between Rowsley & Baslow, you will find the car park close to Chatsworth Garden Centre.

Terrain: Easy walking along clear paths and estate roads with a steady climb
