Steamed Lemon Tilapia with Teriyaki Sauce
Serves 4, Preparation 10 minutes, Cooking time 20 minutes
3 tablespoons Soy sauce
2 tablespoons sugar
1 lemon, half sliced, half juiced
250g basmati rice
3cm piece ginger, shredded
1 red chilli, sliced
small bunch spring onions, sliced
4 pieces of Tilapia
1. Pour the soy sauce, mirin, lemon juice and sugar into a small saucepan and bring to the boil. Simmer for about 5 minutes until it has gone slightly syrupy then remove and set aside.
2. Put the rice in a large saucepan and cover with approximately 600ml water. Bring to the boil and then simmer for approximately 5 minutes until the rice has absorbed about 3/4 of the water. If the water has been absorbed just add a little more.
3. Place the fish fillets on top of the rice and sprinkle with the ginger, chilli and a slice of lemon. Season, cover and cook for about 5 minutes until the fish is cooked through.
4. Serve with the sauce drizzled over the top and the spring onions sprinkled on.
